If you are a user of Splenda, I recommend reading "Sweet Deception: How Splenda, Nutrasweet and the FDA are hazardous to your health." This excellent book is an expose on artificial sweeteners and is a must read for anyone who uses them. But on baking with Splenda, it talks about how many chefs have used Splenda in their baking and how in taste tests, everyone preferred the baked goods made with real sugar because the Splenda baked goods were "disgusting". Also the book covers how powdered Splenda is 99% sugar and 1% sucralose--hardly sugar free--in fact it will raise blood sugars especially in diabetics! Furthermore, Splenda was discovered first as a pesticide but because it tasted sweet, the scientists said "Hey let's put in the food supply." Mad scientists at work.
